I keep track of my wordcounts in a Google Docs spreadsheet, then copy it into good old Microsoft Excel to make the graph. Excel has awesome graphing capabilities, much more powerful and flexible than gdocs. I'd just do it all in Excel, but I like being able to update the spreadsheet when I'm on the road and don't have my computer along.
