We use the recipe from the Tartine cookbook. (Tartine is a stupendously amazing French bakery in San Francisco, and their cookbook is T's pastry go-to. If you're ever down here, I highly recommend a visit if you have any tolerance for standing in line and sharing a table with strangers.) This looks about right.
